These loaded sweet potato fries will be your new favourite meal! So easy and so tasty, you won’t want to share!
Ingredients
- 750g of sweet potato, cut into fries
- 2 tbsp olive oil
- Salt and pepper
- 350g pulled pork
- 1/2 cup Big Rick’s BBQ Sauce
- 1 cup grated cheese
- 1 cup coleslaw
Method
- Preheat oven to 230C. Coat a baking tray with olive oil.
- Toss sweet potatoes in olive oil, salt and pepper and place on the baking tray in a single layer.
- Bake for 20-25 minutes, flipping halfway.
- Place cooked fries into a skillet and top with pulled pork, Big Rick’s BBQ Sauce and cheese. Bake for another 5 minutes until the cheese has melted.
- Top with coleslaw and serve.
Recipe Alternatives
Try adding extra toppings, such as onions or bacon. Or, try coating your fries in different spices such as cumin or paprika to add some extra flavour!
