This recipe is a great meat-free alternative to pulled pork burgers – an instant crowd pleaser!
- 400g jackfruit
- 250ml cider
- 4 burger buns
- 200g coleslaw
- 1 cup Big Rick’s BBQ Sauce
- Cut jackfruit into pieces and combine with cider in a pan, as well as enough water to cover.
- Place over heat until boiling, then simmer for 30-35 minutes until liquid has evaporated and the fruit is tender. Shred the jackfruit.
- Stir 3/4 cup of Big Rick’s BBQ Sauce through the jackfruit and construct burgers with buns, coleslaw, pulled jackfruit and extra BBQ sauce.
Use gluten-free burger buns to make this recipe gluten-free. Try adding different toppings such as pickled onions, or maybe try some Big Rick’s Hot As Sauce for a bite.
